It Seems Early for Ratatouille…

… but all the fixins were on offer at the market this morning — how could I resist! Here’s the recipe I used. I had everything but the pepper. I used basil instead of thyme. I made my own tomato puree using a huge tomato I bought at the market today. Served it on top of some of the olive bread I bought at the market (and froze) last weekend, toasted. Balsamic drizzled on top.
