It’s been a while since I posted, but I’m back! Yesterday, I bought some kale from Easton Market Square. Last night, I roasted some of the kale and had that with a spicy grilled cheese sandwich. I saved the rest of the kale for this soup recipe.
I used regular pork sausage instead of the turkey sausage so my version isn’t quite as healthy as Cooking Light’s. I served mine with some of the Yorkshire puddings I made back in December. The recipe made a ton of soup, so I’m freezing several containers for lunches later on.
