Dinner tonight was pretty amazing. I followed this recipe for bison filet, but added a few items to the pan sauce. Namely sliced mushrooms, garlic, crushed red pepper and crumbled bacon. Here’s the recipe for the pan sauce:
1/2 c. red wine
1 1/2 c. sliced mushrooms
1 garlic clove, minced
1/4 tsp crushed red pepper
salt and pepper to taste
1 slice bacon, cooked and crumbled
After removing the meat from the pan, pour in the wine and bring to a boil, scraping up the brown bits. Add in the sliced mushrooms, garlic and crushed red pepper. Sprinkle in salt and pepper. Stir in crumbled bacon and continue cooking until mushrooms are done. Pour over meat and serve.
I had mine with sweet potato oven fries and roasted broccoli.
